Simply Amazing! Miss Mabel’s Own Fresh Coconut Cake!

Sorry I have been absent for a whole week, but I had cataract surgery and it took a few days to acclimate. Now that I can see the keyboard again (better vision than I have ever had!) I’m back!

For our Memorial Day week-end cook out, I got adventurous and finally made Miss Mabel’s Fresh Coconut Cake. Only…. I cheated. I did not use a fresh coconut. I just couldn’t see myself drilling holes in a coconut and all that. Sounded like a trip to the Emergency Department to me.

So I bought a large can of coconut milk (I shook the can vigorously… I know some folks don’t) and a bag of shredded coconut. For the frosting, I measured out 1/2C shredded coconut and dribbled in coconut milk by the tablespoonful until it was wet but not soaked. Between 1/8 and 1/4 cup. Then let it sit.

For the cake, in one bowl cream 1/2C shortening and 1-1/2C sugar til light and fluffy. In another bowl, sift together 2-1/2C cake flour, 3t baking powder, and 1/4t salt. In a third bowl, beat 4 egg whites until stiff peaks form. Alternatively add some dry ingredients to the shortening mixture and a splash of the coconut milk. Beat well after each addition. Then gently fold in egg whites with a rubber spatula. Pour batter into a 9×13 pan sprayed with cooking spray or 2- 8 or 9″ round layer pans sprayed with cooking spray. Bake at 350 F for 30-35 minutes for 9×13 and 35-40 minutes for layer pans. Cool on racks. Turn layers out after 10 minutes.

For the amazing frosting, you need 8T unsalted butter and 6T salted butter, both at room temp. Beat until very light and fluffy. Add in 3C confectioners sugar, 1 cup at a time, beating well after each add in, up to 4T coconut milk, beating well after each, to spreading consistency. Beat in 1t vanilla. Now, with a rubber spatula, fold in the 1/2C wetted down coconut.

Frosting is ready to frost your cooled cake! After frosting, wrap loosely in plastic and refrigerate at least an hour. Keep leftovers wrapped in the fridge.

The highest compliment I received was from Miss Mabel herself, who said there is nothing like fresh coconut cake! Ssshhhhh! Don’t tell I cheated!
